Pork Food Safety

Buying Pork
When buying pork, look for cuts with a relatively small amount of fat over the outside and with meat that is firm & and a grayish pink color.

Cooking Pork
Pork must be adequately cooked to eliminate disease-causing parasites and bacteria that many be present. Pork should be cooked to a safe internal temperature of 145° for all cuts with the exception of ground pork which should be cooked to 160°.

Washing Pork
It isn’t necessary to wash raw pork before cooking it. Any bacteria which might be present on the surface would be destroyed by cooking.
