Beverly M. Copeland is an Assistant Professor and the Program Coordinator of the Undergraduate Human Nutrition and Foods Program, at Prairie View A&M University.

A native of St. Thomas, Jamaica, Dr. Copeland earned a bachelor’s degree in Nutrition and a master’s in Human Sciences from Prairie View A&M University. She also earned a PhD in Nutritional Sciences from Howard University, Washington DC.

Prior to joining Prairie View A & M University as Assistant Professor, Dr. Copeland worked as a Nutrition Specialist at Gulf Coast Community Service Association, Head Start from 2006 to 2009. In August, 2009 Dr. Copeland matriculated at Howard University where her major research concentration was on Childhood Obesity in Head Start Children. During her studies at Howard, she volunteered in the community with the Capital Area Food Bank and the Edward Mazique Parent and Child Center and Howard University hospital where she worked as a nutrition educator and a clinical dietitian respectively.

After graduating with her doctoral degree, she accepted the position as Assistant Professor in Nutrition at Prairie View A&M University and subsequently, was appointed as the Program Coordinator for the Undergraduate Nutrition Program in September, 2013.

Dr. Copeland is registered dietitian, and holds membership in the Academy of Nutrition and Dietetics, Texas Academy of Nutrition and Dietetics and Golden Key International Honor Society. She has presented her research on “The Risk Factors of Childhood Obesity in Head Start Children” at Texas Dietetics Association Annual Conference, Experimental Biology Conference and Head Start National Research Conference.
