"Rosenthal Meat Center Building"The purpose of the Rosenthal Meat Science and Technology Center (RMSTC) is to provide a facility to conduct teaching, research, and public service activities of the Department of Animal Science. As such, it is the most comprehensive facility of its kind in the USA, devoted to the development of science and the application of that science to the solutions of problems in animal and meat science.

        The hanging weight on a side of beef is approximately 375-400 lbs. Take home weight is around half of that. I will forward you a beef side cut sheet so you may see what you get.

    Is your beef grass fed?

      Our beef is grain fed. We may possibly carry a very small amount of grass-fed beef this summer, but I do not have any dates yet on when it may be available.

      • Do you have any more info on your availability for grass-fed beef this summer? If it is available — does it apply to the sale event you are running?

          I will not be getting anymore grass-fed beef until next year. The grass-fed was not included in the sale.

    Two questions. Is your beef hormone or antibiotic free? Also, is your Aggie Honey wildflower honey?

      Thank you for your questions. All cattle harvested here are held to the withdrawal standards of any medications that they might have received prior to entering our facilities. The cattle are checked when they arrive for good health and are not allowed to be processed if they present any health issues. The cattle that we harvest here are not specifically selected to be free of hormones and or antibiotics. As always we strive to produce the most wholesome product available for our customers.
      The Aggie Honey is raw wildflower honey.

    I am a 2013 graduate of Texas A&M Agribusiness from Nacogdoches,TX and have recently started retailing beef cuts from my processed cattle. My issue now is that the traditional steaks and ground beef are easily marketed, but the remainder (mainly roast, brisket) is slow to sell. My question is what cuts do I need to fully maximize the value of each carcass?

      You can turn all or any of the lean tissue into ground beef. You best steaks and the steaks with the greatest demand are the steaks from the loin and rib. The greatest challenge is selling the cuts from the round and chuck. The rib and loin cuts make up 10-12% of the carcass. About 33% is bone and fat and about 33% is ground beef. You still have about 25% to find a home for. Good luck.
