Poultry science research priorities include environmental concerns, food safety, health and welfare, and process and ingredient technologies. New approaches to environmental impact include developing alternate uses for the waste produced by the poultry industry. In the area of food safety, we focus on the role of the live production factors that contribute to initial contamination. Animal welfare is also a growing concern of both the public and the poultry industry. We provide objective information about the treatment and conditions of the animals. We seek better understanding of the effects of production systems and the environment on the well-being and performance of the bird. Our current programs also focus on innovative processing technologies and their effect on product quality and safety. Across all these issues genomics and proteomics provide a range of opportunities to improve poultry production and products.
