Breakfast Casserole
Ingredients
- 8 slices wheat bread with crusts cut off
- 4 ounces extra lean Canadian bacon
- 1 1/4 cup fat free egg substitute
- 2 cups fat free half and half
- 1 1/2 cups shredded cheddar cheese reduced fat
- 1 tablespoons Italian herb blend no salt added

- Preheat oven to 350 degrees.
- Spray casserole dish (9x13) with cooking spray.
- After crust is cut off bread, tear into bite size pieces and place in bottom of casserole dish.
- Beat eggs and then add all other ingredients (reserving 1/2 cup cheese to top of casserole) mixing well.
- Pour on top of bread mixture and top with remaining cheese.
- Optional seasonings: pepper, jalapeno peppers, crushed red pepper.
- Let set in the refrigerator for at least 30 minutes. Bake for 35 minutes.

Chicken and Spinach Lasagna

Ingredients
- 3 boneless, skinless chicken breasts
- 1/4 tsp black pepper
- 1/2 cup Parmesan cheese low sodium
- 1/3 cup onion chopped
- 8 oz sour cream fat free
- 1 cup 1% Milk
- 10 oz frozen spinach thawed and drained
- 2 10.75 oz cans cream of chicken soup reduced sodium
- 16 oz whole wheat pasta noodles parboiled
- 1 cup shredded mozzarella cheese fat free

- Preheat oven to 350 degrees Fahrenheit; spray a 9x13 inch baking pan with cooking spray.
- Poach chicken breasts in water until done. Drain and cut into bite size pieces and place in a large mixing bowl.
- Add parmesan cheese, onion, sour cream, milk, spinach, pepper and cream of chicken soup to the chicken and mix well.
- Place 3 parboiled noodles in bottom of the pan. Spoon 1/3 of the chicken mixture on top. Sprinkle with 1/3 of mozzarella cheese. Repeat layers.
- Bake for 30 to 45 minutes or until mixture begins to bubble. Let rest 10 minutes before cutting.
Southwest Turkey Bake
This easy turkey casserole is a perfect weeknight meal when you’re looking for some spice in your life! The southwest flavors will keep you coming back for seconds!
Ingredients
- 1 pound extra lean ground turkey
- 1 - 15 ounce can low sodium black beans rinsed and drained
- 1 cup salsa
- 1/2 teaspoon cumin
- 1/8 teaspoon ground red chili pepper
- 1 - 8.5 ounce package corn muffin mix
- 3/4 cup chicken broth 99% fat free
- 1 egg
- 3/4 cup shredded Mexican blend cheese reduced fat

- Preheat oven to 400° F.
- Brown ground turkey in skillet until no longer pink.
- Add black beans, salsa, cumin, and red pepper; simmer 2 minutes.
- Layer turkey mixture on bottom of 13×9 inch baking dish.
- In a medium bowl combine corn muffin mix, broth, and egg; stir well to combine.
- Spread corn mixture over turkey to cover.
- Sprinkle evenly with cheese.
- Bake 15 minutes or until edges are lightly browned.
- Cut into 8 squares and serve.

Deep Dish Pizza Casserole
Deep Dish Pizza Casserole is your new go to dinner! This kid friendly dinner is quick and easy to make and even quicker to disappear!
Ingredients
- 1 pound lean ground beef
- 15 ounce can tomato sauce no salt added
- cooking spray
- 10 ounce refrigerated pizza crust
- 1 cup reduced fat mozzarella cheese shredded
- 1 cup fresh baby spinach
- 1 yellow bell pepper sliced
- 1/2 cup cherry tomatoes halved
Servings: 3x3 inch square

- Wash hands, clean surface and pre-heat oven to 425 degrees F.
- Brown lean ground beef in a pan over medium heat.
- Add tomato sauce to cooked, browned meat. Cook together and let simmer.
- Spray 9 X 13 inch baking pan with cooking spray.
- Unroll refrigerated package of pizza crust, pat well and smooth out up to the sides.
- Sprinkle ½ of mozzarella cheese on crust and cover with all of the meat sauce.
- Top with spinach, bell peppers and tomatoes.
- Bake in oven for 12 minutes.
- Remove from oven, top with remainder of cheese and return to oven till melted.
