    Lamb whole carcass – is that processed or DIY? Sorry for my ignorance but I only know beef sides. Also: do you have freezer boxing/chests (like wax boxes) available for picking up?

      We offer lamb carcasses whole and cut and wrapped. We also have a variety of lamb cuts available in our retail area. We do not have freezer chest and I’m not familiar with the term wax bones. I hope this helped. Please come in to our store to see what we have that might meet your needs.

      We do not raise our own lamb, we purchase the lamb from 4Hers at the Houston Live Stock Show and Rodeo. Lambs processed at Rosenthal Center are from young animals, usually less than one year of age. These lambs produce carcasses that are almost always equivalent to U.S. Choice or U.S. Prime. The lamb cuts are closely trimmed and contain a high proportion of lean.
